The only book I use for baked goods I’ve baked over 30 recipes out of this book and each one was perfect (aside from a couple of user errors). Walter gives great tips on how to handle ingredients to get the best end product, and I religiously follow each step. If Walter says to blend something for 3 minutes, she’s always right. When you want to make something easy, fast and good, this is the book to turn to. Carole Walters is high up there in my personal pastry pantheon. Especially since she remembers to mention small, but basic steps critical to success. Lovely book, but… I’ve only made the cakes in this book so far, and while this a lovely addition to my shelf, the reason I’m not giving this 5 stars is because the baking TIMES are WAY off. If you really do bake your cakes for the hour-and-fifteen minutes called for in most of these recipes, you will end up with a dry and overbaked product. While I’m aware that ovens vary, I’ve never had this trouble with any similar book. Most often, forty-five minutes does the trick.
