This Coffee is an exceptional Honduran coffee from the Marcala region. No chemical inputs are used. The cherries (fruit of the coffee bean), are composted and used as fertilizer, along with vermiculture, and fewer insects are present at the altitude that it’s grown, so no insecticides are necessary. If there ever is a bug problem, farmers sometimes plant peppers as a repellent. The coffee is very dense, and thus has depth of flavor and we are able to roast it just right to bring out its natural flavor characteristics and a wonderful sweetness. All our coffees are roasted fresh to order in multiple small batch roasters (30-60 kilos) at our facility in Miami. Light roast had little flavor or aroma. Beans were harder to grind than usual. I got the light roast. It had almost no coffee flavor. I tried several different brewing methods and doubled the amount of beans I usually use. Still weak. The coffee had very little aroma when I opened the bag. I usually get light roast because I don’t like the burnt flavor some coffees have (Starbucks). The beans were much harder to grind than any other coffee I have. (Obviously, I use a manual grinder.) I also tried the Don Pablo Decaf Swiss Water Process Colombian Gourmet Coffee…

Makes good espresso, french press I first tried Cafe Don Pablo’s medium-dark roast (whole bean). I did not care for the flavor profile on the medium-dark roast (see my review on that one if you want to know why). I decided to give the light roast a try and that is now on my monthly purchasing cycle (since April/March 2017). The roast itself is almost medium. Beans are uniform. There are very few split, broken, or defective beans. I’ve seen only a few (if any) quakers, sour, or floater beans.Very few husks if any. So far…
